Quality of beef was great. Brisket was super thin on the flat so I had to slice a considerable amount off to even it out. Really large layer of fat left on back. Lost over 30% of the weight after trim.

The two bavette steaks were cut very differently from each other, as shown in the pictures. One steak looked like it was sliced in half or butterflied. So it was impossible to cook the steaks the same way. Also, the meat was not very tender.

As you can see from picture I was sadly disappointed by the size differences in the steaks I recieved. 3 were much smaller. Flavor was great to excellent but would expect better size quality. Likely will go back to my butcher. But wayyyy better than Omaha Steak. Way better
