The marbeling was great. Brisket came out fantastic. Smoked over night at 225, wrapped in butcher paper at 170 with tallow, and then pulled when probed tender at around 204. Rested in cooler for 3 hours. Used holy cow and Texas sugar rub by meat church.

These ribs came out. Fantastic! I used Neat Church Holy Cow for an overnight brine. Smoked about five hours then I applied some beef tallow wrapped in butcher paper for about three more hours until probe tender. Delicious!
