Griddle is a beast! It has required an adjustment in cooking methods such as allowing more time to preheat at a lower temperature in order to have even cooking due to the thickness of the material. I do love the thickness for cooking, however you do need to be aware that the thickness also makes it very heavy. After seasoning and getting used to how to use it to obtain the best results, it is one of the most used pans in the kitchen.
