I waited a few months before giving my review to be fair with the feedback. This has been absolutely the best pan I have ever used. It’s helped produce some of my best dishes as of late and has replaced my main staples that I cooked on in the kitchen. Perfect ratio of workable surface area and edge height. The hand hammered texture on the sidewalls are gorgeous. So far the seasoning build up has been quite easy and predictable and this roaster is being used almost daily as a handleless skillet for breakfast items and then as a roaster/serving dish in the evenings. I would like advice on how often I should re-season these pans. I did it one in my home on a gas stove top using avocado oil approx. 15 minutes and it took days to remove the smell (Smoke) odor. I have a gas grill outdoors for the next time and that is what I'll use. Can you provide additional insight please? Also, I want new pots and a 9" pan (with cover) to complete this set Please advise

Absolutely fantastic. Lots of other carbon steel pans tend to warp or round out on the bottom over time of heavy heat/use, not this one. It’s rock solid and worthy of every dish it’s used for. The beauty alone with all of the hand made flourishes make this one of a kind.

I just received the Pro Rondeau ("Rondeaunt") - Seconds and it looks beautiful. I have purchased "seconds" before and they have performed great, thus my expectation is that this item will also exceed my expectations. And I was surprised how light the pan was considering its size. The large sidewalls will let me cook stews, lasagna, pies and similar type dishes and I am looking forward to the experiences.

I had the 11" fry pan however we found the handle awkward and decided to go with the roaster- it fits our style of "carnivore" cooking. I used flax oil to season the first time- I do not use seed oils of any kind and switched to avocado oil with a high smoke point- we'll see how it goes. I thought it was neat when the fry pan came surrounded by chips whereas this simply had brown paper-the chips seemed to add a touch of class to the presentation?

I bought a so called “seconds” pan. It looks flawless to me. I compared it to my son’s pan and I can’t see much difference. I used it in my pizza oven and it worked great. After I seasoned it, I had no issues with sticking. I highly recommend this brand. I’ve added a number of other styles of pans largely because of my experience with this pan.
